Easter treat: Pineapple Mango Corn Muffins

Happy Easter! Holidays always call for a special treat – these are Pineapple Mango Corn Muffins with cayenne. I will list the ingredients I used, but I don’t measure or follow a recipe, so sorry about that. 😜

[ fresh pineapple mango puree (pineapple and mangos in the food processor), homemade applesauce, vanilla, soymilk, ground flax, sprinkle of hemp seeds ] – combined in one bowl / [ whole grain cornmeal, whole wheat flour, baking powder, baking soda, and cayenne pepper ] – combined in a separate bowl. Then stir both together without overmixing. Using silicone cups, baked at 350 and check for appropriate doneness. (Pineapple slice added prior to baking) Mmm!
