What to do with excess leafy greens?

(kale, beet tops, spinach, bok choy, herbs, etc) – Make pesto!

Quick and easy, this sauce/spread is an excellent way to get the dark leafy greens that I recommend as one of the top foods to consume frequently.

In addition, when you prepare it with nuts or seeds such as walnuts or pepitas (avocado is great too) rather than oil you’re getting the benefit of healthful fats to accompany all the vitamins – especially fat-soluble ones abundant in leafy greens – iron, & abundant phytonutrients they provide.

Stir it into a pasta, mix it into rice or grains, spread on bread, or add it to any dish for extra goodness & flavor!
